Instructions
Step 1: Boil and mash potatoes
Boil potato cubes in salted water for 15 min until fork-tender. Drain VERY well — let steam off in colander for 5 min. Mash without adding any liquid until smooth.
Step 2: Sauté vegetables
Heat olive oil in a skillet over medium heat. Add diced onion and carrots; cook 5 min until soft. Add garlic, peas, and corn; cook 2 more min. Season with salt, pepper, and paprika.
Step 3: Combine and shape
Mix mashed potatoes with sautéed veggies and parmesan. Let cool 10 min. Shape into 12 oval patties about 3 inches long. Place on a parchment-lined tray.
Step 4: Chill 30 minutes
