The Drink That Looks Like It Took All Day
I am always looking for drinks that feel special without requiring a bartending degree. Dirty sodas hit that mark better than almost anything else I have tried. The layered look, the bubbles, the color — it all reads as impressive when the reality is about 3 minutes of pouring.
This Malibu version with dark cherry and grenadine is what I call my midnight drink. It looks dark and moody, tastes like tropical summer, and is light enough that you can have a second one.
Five ingredients. One glass. No special equipment.
Ingredients
- 2 oz Malibu coconut rum
- 6 oz dark cherry sparkling water or soda
- 1 oz grenadine
- Juice of half a lime
- Crushed ice
Directions
- Fill a tall glass with crushed ice.
- Add Malibu rum and fresh lime juice.
- Pour the dark cherry soda slowly over the ice.
- Float the grenadine by drizzling it over the back of a spoon — it will sink and create a beautiful swirl.
- Garnish and serve immediately.
The Grenadine Swirl Trick
The most visually striking part of this drink is the grenadine swirl. The key is to pour it slowly over the back of a spoon so it disperses gently and sinks through the drink. If you just pour it in directly, it mixes too fast and you lose the layered effect.
Same principle as a tequila sunrise — density difference creates the visual layer. Grenadine is denser than the soda so it naturally sinks if you add it slowly.
Ingredient Notes
- Malibu rum — the coconut flavor is essential here. Do not substitute with plain rum unless you add a little coconut extract
- Dark cherry soda — Jarritos dark cherry, Black Cherry LaCroix, or any dark cherry sparkling water works
- Grenadine — real pomegranate grenadine tastes much better than the artificial red stuff
- Lime — fresh is better, but bottled lime juice works in a pinch
Make It a Mocktail
Replace the Malibu with coconut sparkling water and a splash of coconut syrup. The presentation is identical and it is just as delicious without the alcohol.
