Sheet Pan Steak and Fries

Ingredients
- 2 sirloin steaks (6–8 oz each) — lean and flavorful
- 3 medium russet or sweet potatoes, cut into strips

- 1 tsp dried rosemary
- Salt and pepper to taste

Instructions
- Preheat oven to 425°F (220°C). Line sheet pan with parchment paper (no foil needed).
- Toss potato strips with 1.5 tbsp olive oil, paprika, garlic powder, salt, and pepper. Spread in a single layer with space between each.
- Roast 20 minutes, flipping halfway, until beginning to crisp and color.
- Pat steaks dry. Rub with remaining olive oil, rosemary, salt, and pepper.
- Push fries aside and add steaks to center of pan.
- Roast 8–12 minutes to desired doneness. Rest steaks 5 minutes.
- Serve with lemon wedges and fresh parsley.
