- 8 whole wheat flour tortillas
- 1 1/2 cups reduced-fat shredded cheese

Instructions
- Brown turkey in a skillet. Drain any fat. Add seasoning, beans, corn, and 1/2 cup salsa. Simmer 5 minutes.
- Preheat oven to 375°F (190°C). Spread enchilada sauce on bottom of 9×13 dish.
- Layer: tortillas, turkey mixture, Greek yogurt, cheese. Repeat twice.
- Top with remaining tortillas, enchilada sauce, and cheese.
- Cover and bake 25 minutes. Uncover and bake 10 more minutes.
- Rest 5 minutes. Top with cilantro, avocado, and jalapeños.
